Antioxidant Effect of Quercetin with Rice Bran Oil on High Cholesterol-Fed Rats

Abstract
To study the effect of antioxidant, quercetin on lipid metabolism, four group of male Sprague-Dawley rats weighing approximately 100 g were tested by supplementing a 1% high-cholesterol diets with rice bran oil (RBO) for four weeks. The serum LDL-cholesterol level of QC (quercetin), VE (vitamin E), and QCVE (quercetin+vitamin E) groups were lower than C (control). QC and VE groups have same effect and no synergic effect on the LDL-cholesterol level (p<0.05). The total cholesterol, HDL-cholesterol, triglyceride, and total lipid levels of the four groups were not significantly different by Duncan¢¥s multiple range test (p<0.05). The serum malondialdehyde levels of rice bran oil group with natural antioxidants groups (QC, VE, and QCVE) were significantly lower than C group. QC and VE groups have same antioxidant activity but no synergic effect on the serum malondialdehyde level (p<0.05). Therefore, this result suggests that the supplement of quercetin with rice bran oil in high cholesterol-fed could be beneficial for LDL-cholesterol and malondialdehyde level reduction in serum.
